NHWT Member Spotlight – Betsy F


Our December Member Spotlight is Betsy. This January will be Betsy’s one-year anniversary with NHWT and she couldn’t be happier that she found this organization. Betsy is the current Chapter co-treasurer with Jodie and looks forward for more involvement with other Chapter positions/projects in the upcoming years. In Betsy’s free time, you can often find her dancing either with the Sleigh Belle Dancers (holiday performing line) or with the Ladies Class (tap/jazz) at Summit Dance Shoppe.

Betsy’s Favorite Color: Purple

Betsy’s Favorite Snacks: Taco Dip and Tortilla Chips

Betsy’s Favorite Project/Social: Bingo, she’s hoping to win big own of these times!




Betsy’s Recipe to Share:

Her grandma’s Bird Nest Cookies

(thumbprint cookies)

Ingredients

  • ½ Cup Butter
  • ½ Cup Brown Sugar
  • 1 Egg yolk (save egg white)
  • 1 Cup Flour
  • Crushed Walnuts
  • Grape Jelly or any flavor of your choice

Directions

  1. Mix together butter, brown sugar and egg yolk
  2. Stir in flour
  3. Shape dough into tine balls and dip in slightly beaten egg white. Roll in crushed Walnuts
  4. Bake 5 minutes at 350o
  5. Remove from oven and make a hole in the center of each cookie. Fill with jelly.
  6. Return to oven and bake 15 minutes
